In Indian cuisine green chillies are very important ingredients. Without its characteristic, spicy taste dishes seems to be insipit and not seasoned enough. You should be very carefull while preparing dishes with use of green chilli. If chilli "juice" will come to the eye or near to even a light skin cut burning will be unbearable. You should also remember about cleaning the cutting board and knife as spicy taste will be transfered to anything what you will prepare with a use of that utensils.
Chillies can be frozen and you can defroze a small ammount of it which you need to use for cooking a particular dish. It is possible to temper a little bit its spicy taste by removing the seeds.
